Mini seaweed sheets (wasabi and sesame oil flavored)
Cook 1/2 cup of quinoa (be sure to add salt to the water so it's not bland!). While that is boiling, lightly sauté the shrimp in olive oil until cooked. Lay out your seaweed squares on a serving platter. Layer on the ingredients, starting with the quinoa (cooled), then a slice of avocado, some carrot sticks, one shrimp, and finish off with a sprig of cilantro on top. And there you have it! A simple and delicious appetizer that can also be a healthy dinner. Enjoy!
